I'm not allowed to distribute the Insuricorp demonstration, but I may be able to make a recording of it for you.  I also have a blog post that talks to some of the reasonings behind why the Insuricorp application is designed like it is, and why it works.  It's back in my blog a few posts about "Thoughts on Accordion Usability".

I'll email you as well, and we'll go from there.

I think you're at an interesting cross-roads.  If chat is all you're interested in from a functionality perspective, you won't need ColdFusion.  FDS includes built-in functionality for chat/messaging.  A few changes to the configuration files and you're done.  From the client side this is but a handful of lines of code (MXML/AS3).  No server-side code necessary.  

Since the title of the session is about CRUD, I'm really going to focus on data access/storage up front.  I'll have a CF version on deck should the audience be more CF-centric.  If time permits, I'll be happy to go over building chat with FDS (literally a ten-minute exercise).  Of course you should feel free to track me down at any point in the conference as well!
